Roasted Veggies with Burrata


6 Cooked Beets

6 Carrots

¼ cup Simple Foods Avocado Oil

Salt to taste

16 oz of burrata cheese

Ingredients Dressing

2 Teaspoons Honey

1 Garlic Clove Minced

4 Teaspoons of White wine vinegar.

4 Tablespoons Simple Foods Avocado Oil.

1 Tablespoon of Rosemary


  1. Pre -Heat the oven at 425 F.

  2. Peel and Sliced The beets,

  3. Peel and cut the carrots in thin slices

  4. In a sheet pan put the beets and the carrots add the avocado oil and salt to taste.

  5. Bake for 20min.

  6. Remove from oven.

  7. Place on a serving dish and add the burrata and dressing.

  8. Make dressing

  9. Mix ingredients until well combine
